Brown Sugar Chocolate Banana Bread

Baking
  • 2  Cups Organic All Purpose Flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 Cup organic brown sugar (or white sugar)
  • 1/4 butter, softened
  • 1  and 1/2  Cups mashed rip bananas (about 3 -4 bananas)
  • 2 eggs
  • 1/3 cup plain or Greek yogurt (i used my homemade greek yogurt… recipe to follow)
  • 1/2 Cup semi sweet chocolate chips

Cooking spray (i used coconut cooking spray or coconut oil)

Preheat oven to 350 degrees .. spray or rub coconut oil in a 8 x 4 loaf pan.

Combine flour, baking soda and salt in small bowl with whisk.

In a mixer bowl add sugar and butter and beat with mixer at medium speed until will blended.  Add banana, egg and yogurt and beat until blended.  Add flour mixture and beat on low until blended.

Melt chocolate chips in microwave or double boiler until almost melted, stir until smooth.  Cool slightly then add 1 cup of the batter to the melted chocolate.  Spoon batters into pan alternating plain with the chocolate batter.  Swirl batters together.

Bake at 350 degrees for about 1 hour and 11 minutes or until a wooden pick inserted into the middle comes out clean.  Cool on wire rack …. yields one loaf…
